Ingredients
  1. 1 and 1/2 cups eggnog
  2. 1/2 cup rum
  3. 4 cups all-purpose flour
  4. 2 Tablespoons baking powder
  5. 1 teaspoon salt
  6. 1 and 1/3 cups sugar
  7. 2 large eggs
  8. 2/3 cup canola oil
  9. 1 teaspoon nutmeg
Instructions
  1. In a large bowl, mix together the flour, baking powder, salt (if using) and sugar.
  2. In a separate bowl, beat the eggs. Stir in the eggnog, yogurt, rum, melted butter and canola oil.
  3. Add the wet ingredients to the dry ingredients and mix gently just until the dry ingredients are completely moistened.
  4. Fill prepared muffin cups about 3/4 full.
  5. Bake at 350 degrees for 20 to 25 minutes.
