Frozen Pineapple Daiquiri Recipe

  1. 1 pound frozen pineapple chunks
  2. 2 cups ice
  3. 6 ounces light rum, such as Bacardi or Flor de Caña
  4. 4 ounces freshly squeezed lime juice (from about 8 medium limes)
  5. 3 ounces Simple Syrup
  6. 2 1/2 ounces dark rum, such as Myers’s or Whaler’s, for serving (optional)
  1. Place all of the ingredients except the dark rum in a blender and blend on high until smooth. Divide the daiquiri among 5 glasses and top each with 1/2 ounce of the dark rum, if using. Serve immediately.
