Strawberry Margarita Popsicles

  1. 1 cup water
  2. 1/4 cup sugar
  3. 1 package (16 ounces) Driscoll's Strawberries
  4. 1/4 cup fresh lime juice
  5. 3 tablespoons tequila
  6. 2 tablespoons orange liqueur
  7. 1/4 teaspoon coarse salt
  1. Bring water and sugar to a boil in a medium saucepan. Reduce heat to low and simmer until sugar is dissolved. Cool completely.
  2. Puree strawberries in blender. Strain through fine mesh sieve (you should have 1 1/2 cups puree). Combine strawberry puree with sugar syrup, lime juice, tequila and orange liqueur. Pour into popsicle molds. Let freeze 2 hours. Sprinkle base of popsicles with salt. Insert popsicle sticks if frozen enough. Let freeze at least 12 hours longer or overnight until solid.
